Wild sea bass is a real favorite among fish lovers and top chiefs alike as it has firm white flesh which is delicate in flavour. It’s an ultimate predator feeding on small fish (e.g. sardines and mackerel) and therefore has a high oil content. 

This king of the ocean is always a great show stopper cooked whole on the bone buried in salt. It’s flakes are arranged in a distinctive snakeskin pattern that eases away from the bone once cooked.

Our Sea Bass is landed on small Cornish day boats, these wonderful silver fish, normally from 500g to 4 kilos. They are caught by fishermen in nets and by hook and line.

Portion guide:
A whole fish produces approx 50% yield. One person will eat about 150-300g fish per serving. This size fish should easily feed two people.
All our whole fish can be prepared to your specific requirements.
